Oh my stars. I am so satisfied. I just made the yummiest casserole I’ve made in a long time.

I love a good casserole (must be my mid-western roots) but I rarely make them because my adored husband is allergic to many things, including some of the most common casserole ingredients. Like cheese. And eggs. And milk (and cream and most dairy, really). It isn’t really a big deal most of the time, but tonight I was craving something warm and filling for dinner and this is what I made:

Athletic Monkey’s Sausage and Egg Casserole

1 pound (ish) turkey sausage (or whatever frozen breakfast sausage you have)

10 eggs

1 cup sharp shredded cheddar cheese (could use reduced fat)

1 cup shredded swiss cheese

1 red (or whatever color) diced bell pepper

1/2 large onion, diced

1/2 cup green onions (if you’ve got em)

1/4 cup (maybe a little more) floor

1/2 rounded teaspoon baking powder

2 big pinches red pepper flakes

1 tablespoon butter

Directions:

1. Heat oven to 350

2. If raw, brown sausage. Drain.

3. Saute onion and bell pepper and sausage in tablespoon butter.

4. In big bowl, beat eggs

5. Add all other ingredients (including onions, bell pepper and sausage) and mix well

6. Put in well greased 9X13 pan and bake 35-40 minutes or until golden brown on top and toothpick comes out clean.

The baby and I both loved this and it will make a great breakfast for the next couple of day.

My husband comes home tonight (YEAH!!) and I will exercise tomorrow. It is on.
